For those in Pacific Palisades, Vintage Grocers offers a holiday menu, complete with entrees like USDA Choice Rib Roast, Whole Roasted Diestel Farms Turkey and In-House Roasted Boneless Turkey Breast, sides including Wild Rice, Mashed Potatoes and Broccoli Casserole, and three varieties of stuffing: Traditional, Apple Cranberry and Vegan Gluten-Free.
For those who are not able to order from Vintage’s extensive holiday offerings, Commissary Manager Jamie Klein sheds some light on last-minute tips and recipes for those hosting at home.
Klein started with the main dish.
“The main thing to remember, whether it is precooked or not, is to bring your protein out of the fridge at least one hour before going into the oven,” Klein shared. “If it’s pre-done, reheat it at 300 degrees until it is properly warmed through; the lower temperature will help retain all those beautiful juices. If you’re cooking your own protein, start with a high temperature, such as 425, to get the color set on your main dish.”
Once the color is reached, Klein explained, reduce the temperature to 300 degrees until it is done—and let the protein rest for 15 to 30 minutes before carving.
Klein recommended creamy mashed potatoes, honey-glazed carrots or a wintry roasted vegetable platter for simple side dishes.
“For exceptional dishes surrounding the main course, it’s as simple as a walk through the produce aisle and a scrounge through your own pantry,” Klein said.
